- 3 tbsp harissa paste
- 1 cup couscous
- 1 medium cucumber, diced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint leaves, chopped
- Juice of 1 lemon

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, harissa paste, minced garlic, salt, and pepper until well mixed. The mixture should be slightly tacky.
- Shape the mixture into 1-inch meatballs using clean hands.
- Heat olive oil in a skillet over medium heat. Cook meatballs for 6–7 minutes per side until golden brown and cooked through.
- In a separate pot, bring water or broth to a boil. Stir in couscous and cover; let sit off heat for about 5 minutes until fluffy.
- For the cucumber salad, mix diced cucumber, parsley, mint, lemon juice, olive oil, salt, and pepper in a bowl.
- Serve warm meatballs over couscous alongside the cucumber salad.
