  • 1 cup canned pineapple chunks (drained)
  • 2 cups all-purpose flour
  • 3/4 cup sugar (mix of brown and white)
  • 2 tsp baking powder
  • 1/2 cup unsweetened coconut flakes
  • 2 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
