- 8 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini)
- 1 cup fresh basil leaves
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente (about 3-5 minutes). Drain and rinse under cold water.
- While the tortellini cooks, wash and halve the cherry tomatoes.
- In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and fresh basil leaves. Gently toss to mix.
- Drizzle olive oil and balsamic vinegar over the salad mixture. Season with salt and pepper, then toss again for even distribution.
- Serve immediately on a platter or in individual bowls, garnished with extra basil if desired.
