  • 8 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini)
  • 1 cup fresh basil leaves
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente (about 3-5 minutes). Drain and rinse under cold water.
  2. While the tortellini cooks, wash and halve the cherry tomatoes.
  3. In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and fresh basil leaves. Gently toss to mix.
  4. Drizzle olive oil and balsamic vinegar over the salad mixture. Season with salt and pepper, then toss again for even distribution.
  5. Serve immediately on a platter or in individual bowls, garnished with extra basil if desired.
