- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced

- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by rinsing cherry tomatoes and cucumber.
- Boil salted water in a pot and cook the orzo pasta according to package instructions (8-10 minutes).
- Heat olive oil in a non-stick skillet over medium-high heat. Season salmon fillets with salt and pepper, then place skin-side down in the pan.
- Cook for about 5 minutes until the skin is golden brown and crispy. Flip gently and cook for another 3-4 minutes until cooked through.
- In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, lemon juice, and olive oil. Mix well.
