  • 2 salmon fillets (6 oz each)
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing cherry tomatoes and cucumber.
  2. Boil salted water in a pot and cook the orzo pasta according to package instructions (8-10 minutes).
  3. Heat olive oil in a non-stick skillet over medium-high heat. Season salmon fillets with salt and pepper, then place skin-side down in the pan.
  4. Cook for about 5 minutes until the skin is golden brown and crispy. Flip gently and cook for another 3-4 minutes until cooked through.
  5. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, lemon juice, and olive oil. Mix well.
  6. Serve the orzo salad on plates alongside each salmon fillet. Garnish with extra lemon wedges if desired.
