  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add chicken cubes and coat evenly. Marinate for at least 30 minutes.
  2. Chop the bell peppers and onion into large chunks.
  3. Soak wooden skewers in water for 30 minutes (if using) then thread chicken and veggies onto skewers alternately.
  4. Preheat the grill to medium-high heat (around 400°F).
  5. Grill skewers for about 5-7 minutes on each side until chicken is cooked through with char marks.
  6. Let rest for 5 minutes before serving.
