- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 large red onion, cut into chunks
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add chicken cubes and coat evenly. Marinate for at least 30 minutes.
- Chop the bell peppers and onion into large chunks.
- Soak wooden skewers in water for 30 minutes (if using) then thread chicken and veggies onto skewers alternately.
- Preheat the grill to medium-high heat (around 400°F).
- Grill skewers for about 5-7 minutes on each side until chicken is cooked through with char marks.
- Let rest for 5 minutes before serving.
