  • 1 cup long grain rice (Basmati or Jasmine)
  • 2 cups low-sodium vegetable broth
  • Juice and zest of 2 fresh lemons
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a large pot over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
  3. Stir in the rinsed rice until coated, then add vegetable broth and lemon juice/zest; bring to a boil.
  4. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed.
  5. Remove from heat, let sit covered for another 5 minutes. Fluff with a fork and stir in chopped parsley, salt, and pepper.
