  • 2 medium sweet potatoes (about 1 lb)
  • 2 ripe avocados
  • 3 cloves garlic
  • Juice of 1 lime (about 2 tbsp)
  • ¼ cup fresh cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  2. Peel and dice sweet potatoes into bite-sized cubes. Toss with olive oil, salt, and pepper; spread on a baking sheet.
  3. Place seasoned chicken on another baking sheet. Bake both trays for 20-25 minutes until chicken is cooked through and sweet potatoes are tender.
  4. While baking, blend avocado, garlic, lime juice, cilantro, olive oil, salt, and pepper until smooth to create the mojo sauce.
  5. Layer sweet potatoes and chicken in bowls; drizzle with avocado mojo sauce. Garnish with extra cilantro or lime wedges if desired.
