  • 1 medium yellow onion, diced
  • 4 garlic cloves
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the chopped carrots and onion in olive oil, salt, and pepper; spread on the baking sheet. Roast for 25-30 minutes until tender.
  3. Wrap garlic cloves in aluminum foil with a drizzle of olive oil; add to the oven during the last 15 minutes of roasting.
  4. In a large pot, combine roasted carrots, onion, squeezed garlic, vegetable broth, spices, and coconut milk. Blend until smooth using an immersion blender or regular blender.
  5. Return the soup to low heat, warm gently while stirring; adjust seasoning if needed.
  6. Serve hot, garnished with fresh herbs or a swirl of coconut milk.
