  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup low-sodium chicken broth
  • 2 cups mashed potatoes (about 3 medium potatoes)
  • 3 tbsp butter
  • 1/4 cup milk
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add oil and sauté chopped onions until translucent (about 5 minutes). Add diced carrots and cook until slightly softened.
  3. Increase heat and add ground turkey; cook until browned (about 8 minutes).
  4. Stir in chicken broth, thyme, parsley, salt, and pepper; let simmer for about 10 minutes until thickened.
  5. While the turkey mixture simmers, boil peeled potatoes in salted water until fork-tender. Drain and mash with butter and milk until creamy.
  6. Spoon turkey mixture into a baking dish and top with mashed potatoes, smoothing out peaks.
  7. Bake in preheated oven for 25-30 minutes until golden brown.
