  • 4 cups spring mix greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1/2 cup radishes, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Wash the spring mix greens thoroughly and pat dry.
  2. Halve the cherry tomatoes and slice the cucumber into rounds.
  3. Trim and thinly slice the radishes. Soak red onion slices in cold water for about 10 minutes to reduce sharpness.
  4. In a large bowl, combine all ingredients: spring mix greens, cherry tomatoes, cucumber slices, radishes, drained red onion, and crumbled feta cheese.
  5. Drizzle olive oil and balsamic vinegar over the salad. Season with salt and pepper; toss gently to coat.
  6. Serve immediately on plates or in bowls.
