- 1 can (15 oz) low-sodium chickpeas, drained and rinsed
- 2 medium fresh tangerines, segmented
- 1/2 small red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp extra virgin olive oil
- 1 tsp cumin powder
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the rinsed chickpeas dry with a paper towel.
- In a bowl, toss chickpeas with olive oil, cumin powder, salt, and pepper until evenly coated.
- Spread seasoned chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes or until crispy.
- While chickpeas roast, chop red onion, cilantro, and segment fresh tangerines.
- In a large bowl, combine roasted chickpeas, chopped onions, cilantro, tangerine segments, and lemon juice. Gently mix to combine.
- Serve immediately or let chill for later enjoyment.
