  • 1 can (15 oz) low-sodium chickpeas, drained and rinsed
  • 2 medium fresh tangerines, segmented
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the rinsed chickpeas dry with a paper towel.
  3. In a bowl, toss chickpeas with olive oil, cumin powder, salt, and pepper until evenly coated.
  4. Spread seasoned chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes or until crispy.
  5. While chickpeas roast, chop red onion, cilantro, and segment fresh tangerines.
  6. In a large bowl, combine roasted chickpeas, chopped onions, cilantro, tangerine segments, and lemon juice. Gently mix to combine.
  7. Serve immediately or let chill for later enjoyment.
