- 1 cup rinsed quinoa
- 2 cups water
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup thinly sliced red onion
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup freshly squeezed lime juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water to remove bitterness.
- In a medium saucepan, bring 1 cup of rinsed quinoa and 2 cups of water to a boil. Reduce heat and simmer for about 15 minutes until fluffy.
- While quinoa cooks, chop cucumber and halve cherry tomatoes.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
- Once quinoa has cooled slightly, combine it in a large bowl with cucumber, tomatoes, mint leaves, and red onion. Drizzle with dressing.
- Gently mix until well combined. Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for 30 minutes to enhance flavors.
