Ingredients

  • 1 cup rinsed quinoa
  • 2 cups water
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness.
  2. In a medium saucepan, bring 1 cup of rinsed quinoa and 2 cups of water to a boil. Reduce heat and simmer for about 15 minutes until fluffy.
  3. While quinoa cooks, chop cucumber and halve cherry tomatoes.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
  5. Once quinoa has cooled slightly, combine it in a large bowl with cucumber, tomatoes, mint leaves, and red onion. Drizzle with dressing.
  6. Gently mix until well combined. Taste and adjust seasoning if necessary.
  7. Serve immediately or refrigerate for 30 minutes to enhance flavors.
