  • 1.5 lbs boneless chicken thighs
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 4 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 2 cups low-sodium chicken broth
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Prepare your ingredients: chop garlic and halve cherry tomatoes.
  2. In a skillet over medium heat, sear chicken thighs until golden brown on both sides.
  3. Layer the chicken at the bottom of your crockpot; add tomatoes, spinach, olives, garlic, and Italian seasoning.
  4. Pour in chicken broth to keep everything moist.
  5. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is fork-tender.
  6. About 30 minutes before serving, taste and adjust seasoning as needed.
