  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (half sharp, half mild)
  • 1 cup sour cream (or Greek yogurt for a healthier option)
  • Juice of 1 lime
  • 1 cup pico de gallo or salsa
  • 2 tbsp chopped fresh cilantro (optional)
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese and sour cream until smooth.
  3. Stir in lime juice, cumin, chili powder, and half the cheddar cheese until well combined.
  4. Gently fold in black beans and pico de gallo using a spatula.
  5. Transfer the mixture to a baking dish, top with remaining cheddar cheese and cilantro if desired.
  6. Bake for about 20 minutes until bubbling at the edges and golden brown on top.
