  • 1 tsp cinnamon

  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup rum or brandy (optional)

Instructions

  2. In a bowl, soak dried mixed fruits in rum or brandy for at least an hour.
  3. In another bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. In a third bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. Gently fold in soaked fruits and toasted nuts until evenly distributed.
  8. Pour batter into the prepared pan and bake for 60-70 minutes until a toothpick comes out clean.
