  • 4 boneless, skinless chicken breasts
  • 2 ears of fresh corn, grilled or roasted
  • 1 red bell pepper, diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with cumin, paprika, salt, and pepper. Let marinate.
  2. Preheat grill; grill corn for about 10 minutes until charred. Cool and cut kernels off the cob.
  3. In a skillet, heat olive oil over medium heat. Sauté diced bell pepper for about 5 minutes until tender.
  4. Cook marinated chicken in the same skillet or grill for 6-7 minutes per side until golden brown and fully cooked. Let rest before slicing.
  5. Mix sour cream with lime juice and chopped cilantro to create lime crema.
  6. Assemble bowls: layer sliced chicken over grilled corn and sautéed peppers. Drizzle with lime crema and sprinkle with cheese.
