- 3 lb chuck roast
- 1 large sweet onion, diced
- 4 cloves fresh garlic, minced
- 2–3 chipotle peppers in adobo sauce (to taste)
- 2 tsp ground cumin
- 2 tsp dried oregano (preferably Mexican)
- Juice of 2 limes
- 1 cup low-sodium beef broth
- Salt and pepper to taste
Instructions
- Trim excess fat from the chuck roast and cut it into large chunks. Season generously with salt, pepper, cumin, and oregano.
- Heat a skillet over medium-high heat and sear the beef until browned all over; set aside.
- In the same skillet, sauté diced onions and minced garlic until translucent.
- Blend chipotle peppers, lime juice, and some beef broth until smooth; pour over seared meat in a slow cooker.
- Add remaining beef broth to the slow cooker, cover, and cook on low for 8 hours or high for 4 hours until fork-tender.
- Shred the beef using two forks and return to the sauce before serving.
