  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • For Frosting: 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ½ cup cocoa powder (for frosting)
  • Heavy cream or milk (to taste)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, oil, milk, and vanilla until smooth.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes for 10 minutes in pans before transferring to wire racks to cool completely.
  7. For frosting: Whip butter until fluffy; gradually add powdered sugar and cocoa until creamy. Adjust consistency with heavy cream or milk as needed.
  8. Assemble by layering cakes with frosting in between; frost the top and sides as desired.
