  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup fig jam
  • 1/4 cup balsamic vinegar
  • 3 garlic cloves (minced)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary (chopped)
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from chicken breasts.
  2. In a bowl, combine fig jam, balsamic vinegar, minced garlic, soy sauce, and olive oil; mix well.
  3. Place chicken in a resealable bag or shallow dish and pour marinade over it. Seal tightly and refrigerate for at least 30 minutes.
  4. Preheat oven to 400°F (200°C) or heat olive oil in a skillet over medium heat.
  5. Remove chicken from marinade (reserve marinade) and sear each breast for 4-5 minutes per side until golden brown.
  6. Pour reserved marinade over chicken and transfer to the oven if using an oven-safe skillet or place in a baking dish.
  7. Bake for 20-25 minutes or until internal temperature reaches 165°F (75°C).
