  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup granulated sugar
  • ¼ cup lemon juice
  • 2 tsp lemon zest
  • ¼ cup lime juice
  • 2 tsp lime zest
  • 1 cup cherries (pitted and chopped)
  • ½ cup pistachios (chopped)
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Bake crust for 10 minutes; let cool.
  4. Beat cream cheese in a large bowl until smooth. Gradually add sugar, mixing well.
  5. Mix in sour cream, lemon juice, lime juice, lemon zest, and lime zest until creamy.
  6. Add eggs one at a time, mixing gently to avoid overmixing.
  7. Fold in cherries and pistachios.
  8. Pour filling over cooled crust and bake for 55-60 minutes until edges are set but center jiggles slightly.
  9. Cool slowly in the oven with the door ajar for about an hour before refrigerating.
