  • 2 cups sweet potatoes, peeled and cubed
  • 2 cups fresh green beans, trimmed and cut into pieces
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup heavy cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. Boil sweet potatoes until tender, about 15 minutes.
  3. In a large bowl, combine cooked sweet potatoes, green beans, heavy cream, garlic powder, salt, and pepper.
  4. Transfer the mixture to the greased baking dish and sprinkle half of the cheddar cheese on top.
  5. Add remaining cheese and panko breadcrumbs over the top.
  6. Bake for 35-40 minutes or until golden brown and bubbly.
