  • 3 bell peppers (mixed colors), halved
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cooked brown rice
  • 1 can (14.5 oz) diced tomatoes (packed in juice)
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 350°F (175°C). Grease a large baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil, then sauté chopped onions and minced garlic until fragrant and translucent.
  3. Add ground beef to the skillet, cooking until browned. Season with salt, pepper, and Italian seasoning.
  4. Stir in cooked rice and diced tomatoes; simmer to meld flavors.
  5. In the baking dish, place halved bell peppers upright and fill each half with the beef mixture.
  6. Top with shredded cheddar cheese and cover with foil.
  7. Bake for 30 minutes, then remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
