  • 1 can (14 oz) marinated artichoke hearts, drained and chopped
  • 1 medium sweet onion, diced
  • 2 stalks celery, chopped
  • 2 cups low-sodium vegetable broth
  • 1/4 cup unsalted butter
  • 2 large eggs, beaten
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the sourdough bread into bite-sized cubes and let them dry out for about an hour.
  3. In a skillet over medium heat, melt butter. Add diced onion and celery; sauté until softened (about 5-7 minutes).
  4. Stir in artichokes, thyme, and parsley; cook for additional 3-4 minutes.
  5. In a large mixing bowl, combine sautéed vegetables with sourdough cubes. Gradually pour in vegetable broth while mixing gently.
  6. Add beaten eggs to bind the mixture; ensure even coating of all ingredients.
  7. Transfer to a greased baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
