  • 1 lb lean ground beef
  • 1 medium sweet yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 1 cup tomato sauce (no added sugars)
  • 2 tbsp mustard
  • 2 tbsp ketchup
  • Salt and pepper to taste
  • Optional: sliced pickles for garnish

Instructions

  1. In a large pot of salted boiling water, cook the elbow macaroni until al dente according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef with diced onions until soft. Drain excess grease.
  3. Stir in minced garlic, tomato sauce, mustard, ketchup, salt, and pepper. Cook until bubbling.
  4. Add cooked pasta and 1 cup of shredded cheese to the skillet. Stir gently to coat everything in cheesy goodness.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish. Top with remaining cheese and bake for 20-25 minutes until golden and bubbly.
