  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 sheets puff pastry, thawed
  • 2 tsp fresh thyme or parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 egg + 1 tbsp water (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent (3-4 minutes), then add minced garlic until golden.
  2. Add diced chicken to the skillet; season with salt and pepper. Cook until no longer pink (6-8 minutes), stirring occasionally.
  3. Stir in sliced mushrooms and herbs; sauté until mushrooms are tender (about 5 minutes).
  4. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface and cut into squares.
  5. Place spoonfuls of the chicken mixture in the center of each pastry square. Fold and seal edges with a fork.
  6. Brush tops with egg wash and bake on a lined baking sheet for 20-25 minutes until golden brown.
