- 8 oz fresh cremini or button mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 sheets puff pastry, thawed
- 2 tsp fresh thyme or parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 egg + 1 tbsp water (for egg wash)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent (3-4 minutes), then add minced garlic until golden.
- Add diced chicken to the skillet; season with salt and pepper. Cook until no longer pink (6-8 minutes), stirring occasionally.
- Stir in sliced mushrooms and herbs; sauté until mushrooms are tender (about 5 minutes).
- Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface and cut into squares.
