  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup coconut cream (canned)
  • 1 cup pineapple chunks (drained)
  • 3/4 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. For the crust: Combine graham cracker crumbs and melted butter in a bowl, then press firmly into the bottom of the prepared pan. Bake for 10 minutes until golden, then let cool.
  3. For the filling: In a mixing bowl, beat softened cream cheese until smooth. Add sour cream, coconut cream, sugar, and vanilla; mix until well combined.
  4. Gently add eggs one at a time to avoid overmixing. Fold in drained pineapple chunks using a spatula.
  5. Pour filling over cooled crust and smooth out the top. Bake for 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before chilling in the fridge for at least two hours before slicing.
