  • 1 cup strong brewed espresso (cooled)

  • 24 savoiardi (ladyfingers)
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. Brew strong espresso and let it cool.
  2. In a mixing bowl, whip heavy cream until stiff peaks form.
  3. In another bowl, combine mascarpone cheese and sugar; mix until smooth.
  4. Gently fold whipped cream into the mascarpone mixture and stir in peppermint extract.
  5. Briefly dip each ladyfinger in cooled espresso and layer them in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat layering with remaining ladyfingers and mascarpone mixture.
  8. Cover and chill in the refrigerator for at least 4 hours or overnight for best flavor.
