  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1/2 cup heavy cream (plus extra for topping)
  • 1/4 tsp cinnamon powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  2. In a bowl, whisk together flour and baking powder.
  3. In another bowl, beat eggs and sugar until thick. Mix in vanilla extract.
  4. Gradually fold the dry mixture into the wet mixture until just combined.
  5. Spoon the batter into muffin cups, filling them two-thirds full. Bake for 15-20 minutes until golden brown; a toothpick should come out clean.
  6. While cooling, mix condensed milk, evaporated milk, and heavy cream in a separate bowl.
  7. Poke holes in each mini cake and generously pour the milk mixture over them to soak.
  8. Whip heavy cream until soft peaks form and spread over each cake. Dust with cinnamon before serving.
