  • 1 lb Italian sausage (sweet or spicy)
  • 4 cups fresh spinach
  • 1 cup acini di pepe pasta
  • 2 medium carrots, finely chopped
  • 2 stalks celery, finely chopped
  • 8 cups low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix ground beef, Italian sausage, breadcrumbs, egg, and seasonings until just combined. Form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Sauté chopped onions, carrots, and celery until onions are translucent (about 5 minutes).
  3. Pour in chicken broth and bring to a gentle boil. Reduce heat and let simmer while shaping the meatballs.
  4. Gently drop meatballs into the simmering broth and cook until they float (about 10 minutes).
  5. Add acini di pepe pasta and spinach; cook according to pasta package instructions (about 8-10 minutes).
  6. Stir in grated Parmesan cheese along with oregano and basil before serving. Adjust seasoning as needed.
