- 3 cups powdered sugar
- 2 tbsp milk
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans; line with parchment paper.
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, beat butter and brown sugar until creamy. Add eggs one at a time, followed by molasses and vanilla; mix until smooth.
- Gradually add dry ingredients alternately with milk to the wet mixture; stir until just combined.
- Divide batter between prepared pans and smooth tops. Bake for 25–30 minutes or until a toothpick comes out clean.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and milk to reach desired consistency.
- Once cooled, frost the top of one cake layer before placing the second layer on top; frost generously.
