Instructions

  1. Preheat oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until mixed.
  2. Press the crumb mixture into the bottom of a springform pan. Bake for about 10 minutes until golden.
  3. In another bowl, beat cream cheese and sugar until creamy. Add sour cream, vanilla extract, nutmeg, cinnamon, and eggnog; mix until smooth.
  4. Beat in eggs one at a time until just combined to avoid overmixing.
  5. Pour the filling over the crust and bake for about 50–60 minutes until set at the edges but slightly jiggly in the center.
  6. Turn off the oven and crack open the door slightly to cool slowly. Refrigerate for at least four hours or overnight before serving.
