  • 8 oz. penne pasta
  • 1 block (8 oz.) feta cheese
  • 1 can (15 oz.) chickpeas, drained and rinsed
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly coat an oven-safe baking dish with olive oil.
  2. In the prepared baking dish, combine cherry tomatoes, chickpeas, minced garlic, olive oil, salt, and pepper until evenly coated.
  3. Place the block of feta cheese in the center of the mixture and drizzle with a little more olive oil.
  4. Bake for 25-30 minutes, until tomatoes are soft and feta is golden brown.
  5. While baking, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  6. Once out of the oven, mix all ingredients together in the baking dish until creamy. Stir in cooked pasta and garnish with fresh herbs before serving.
