- 8 oz. penne pasta
- 1 block (8 oz.) feta cheese
- 1 can (15 oz.) chickpeas, drained and rinsed
- 1 pint cherry tomatoes
- 3 tbsp olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Lightly coat an oven-safe baking dish with olive oil.
- In the prepared baking dish, combine cherry tomatoes, chickpeas, minced garlic, olive oil, salt, and pepper until evenly coated.
- Place the block of feta cheese in the center of the mixture and drizzle with a little more olive oil.
- Bake for 25-30 minutes, until tomatoes are soft and feta is golden brown.
- While baking, cook the penne pasta according to package instructions until al dente. Drain and set aside.
