Ingredients

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 2 gelatin sheets
  • 2 Earl Grey tea bags
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)

Instructions

  1. Soak the gelatin sheets in cold water for 5 to 10 minutes until softened.
  2. In a saucepan, heat heavy cream, whole milk, and sugar over medium heat until steaming (do not boil).
  3. Remove from heat, add softened gelatin and tea bags, and steep for 5 minutes.
  4. Strain the mixture through a fine mesh sieve into another bowl to remove tea bags.
  5. Pour into serving cups or ramekins and refrigerate for at least 4 hours or overnight until set.
  6. Serve chilled, topped with fresh berries or citrus zest if desired.
