Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Create a well in the dry mixture and add oil and eggs; mix until just combined.
  4. Fold in the grated carrots and nuts gently.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks. Frost with cream cheese frosting when completely cool.
