  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 3 tbsp sriracha sauce (adjust for spice preference)
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 large tomato, sliced
  • 4 soft hamburger buns
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels. Set up a breading station with flour seasoned with salt and pepper in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
  3. Dip each chicken breast first in flour, then egg, followed by panko breadcrumbs.
  4. Place the breaded chicken on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach 165°F).
  5. While the chicken bakes, mix mayonnaise, sriracha, honey, lime juice, garlic powder, salt, and pepper in a bowl to create the Bang Bang sauce.
  6. After baking, let the chicken rest for a few minutes before slicing. Spread the sauce on each side of the buns and layer in lettuce, tomato slices, and crispy chicken.
  7. Top with more Bang Bang sauce if desired and close the sandwiches gently.
