- 3 medium russet baking potatoes
- 2 cups fresh broccoli florets
- 1 cup shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly coat a large baking dish with nonstick spray.
- Wash the potatoes thoroughly, pierce them with a fork, and microwave for 6-8 minutes until tender but not fully cooked.
- In a skillet over medium heat, cook diced chicken until golden brown and no longer pink inside (about 7-10 minutes).
- In a large bowl, mix cooked chicken, steamed broccoli, cream of chicken soup, shredded cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Slice the partially cooked potatoes into rounds and layer half in the baking dish. Spread half of the chicken mixture over them. Repeat with remaining potatoes and chicken mixture.
- Cover with foil and bake for 30 minutes. Remove foil and sprinkle extra cheese on top; bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
