  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 medium russet baking potatoes
  • 2 cups fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly coat a large baking dish with nonstick spray.
  2. Wash the potatoes thoroughly, pierce them with a fork, and microwave for 6-8 minutes until tender but not fully cooked.
  3. In a skillet over medium heat, cook diced chicken until golden brown and no longer pink inside (about 7-10 minutes).
  4. In a large bowl, mix cooked chicken, steamed broccoli, cream of chicken soup, shredded cheese, garlic powder, onion powder, salt, and pepper until well combined.
  5. Slice the partially cooked potatoes into rounds and layer half in the baking dish. Spread half of the chicken mixture over them. Repeat with remaining potatoes and chicken mixture.
  6. Cover with foil and bake for 30 minutes. Remove foil and sprinkle extra cheese on top; bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
