  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 8 small soft tortillas
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • 1 cup diced tomatoes
  • Lime wedges for serving

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. In one bowl, combine flour with salt and pepper. In another bowl, beat the egg. In a third bowl, mix panko breadcrumbs with additional spices if desired.
