  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 package (3.4 oz) instant chocolate pudding mix

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients; mix until smooth.
  4. Divide batter between prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean. Cool in pans before transferring to wire racks.
  5. Prepare the chocolate pudding according to package directions and chill.
  6. For ganache frosting, heat heavy cream until just below boiling; pour over chocolate chips and stir until melted and smooth.
  7. Assemble the cake by placing one layer on a serving plate. Spread half of the chilled pudding on top and place the second layer on top. Frost the entire cake with ganache.
