  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp pure vanilla extract
  • 1 cup heavy cream
  • 1 cup mixed berries (strawberries, raspberries, blueberries)

Instructions

  1. Preheat oven to 250°F (120°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until soft peaks form (about 2-3 minutes).
  3. Gradually add sugar while continuously beating until glossy peaks form.
  4. Gently fold in vinegar and vanilla extract.
  5. Spoon or pipe small nests onto prepared baking sheets, about 3 inches in diameter with slightly raised edges.
  6. Bake for 1 hour and 15 minutes until dry but still white. Turn off the oven and let cool inside.
  7. Whip cream to soft peaks and top each nest generously with whipped cream and fresh berries before serving.
