- 1 tsp vanilla extract
- 3 large eggs (room temperature)
- ¾ cup brown sugar (packed)
- ⅓ cup corn syrup
- 1 tsp ground cinnamon
- ¼ tsp salt
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until crumbly. Press into the bottom of a springform pan.
- Bake crust for about 10 minutes until golden. Let cool.
- In a large bowl, beat cream cheese until smooth. Add sour cream, vanilla extract, and granulated sugar; mix until combined.
- Add eggs one at a time, mixing gently after each addition.
- In another bowl, whisk together brown sugar, corn syrup, cinnamon, chopped pecans, and salt.
- Pour half of the cheesecake mixture over the cooled crust. Spoon pecan pie mixture on top before adding the remaining cheesecake mixture; swirl gently with a knife.
- Bake for 60–70 minutes until edges are set but center jiggles slightly. Turn off oven and let cool inside with door ajar.
