- 1 cup acini di pepe pasta
- 4 cups fresh spinach or escarole
- 1/2 cup grated Parmesan cheese
Instructions
- In a medium bowl, combine ground beef, ground pork, breadcrumbs, minced garlic, parsley, salt, and pepper. Mix gently until just blended.
- Heat olive oil in a large pot over medium heat. Add meatballs in batches; cook until browned on all sides (about 5-7 minutes). Remove and set aside.
- In the same pot, sauté chopped onions and remaining garlic until translucent (about 3 minutes).
- Pour in chicken broth and bring to a gentle boil. Stir in acini di pepe pasta; cook according to package instructions until al dente (8-10 minutes).
- Add spinach or escarole and cooked meatballs back to the pot; simmer for an additional 5 minutes until greens are wilted.
- Remove from heat and stir in grated Parmesan cheese until melted. Serve hot with extra cheese if desired.
