  • 1 cup stone-ground grits
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 tbsp butter (for grits)
  • 2 tbsp butter (for shrimp)
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 green onions, sliced (for garnish)
  • Salt and pepper, to taste
  • Chopped parsley (optional)

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits and reduce heat to low. Simmer uncovered for about 20 minutes until thickened.
  2. Stir in heavy cream, 2 tablespoons of butter, salt, and pepper into the cooked grits until creamy.
  3. In a skillet over medium heat, melt remaining butter. Add minced garlic and sauté for 1 minute before adding shrimp seasoned with Cajun seasoning.
  4. Cook shrimp until pink and opaque; add lemon juice and stir well to combine.
  5. Serve the creamy grits topped with the spicy shrimp mixture, garnished with green onions and parsley if desired.
