  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup carrots, grated
  • ½ cup fresh cilantro, chopped
  • 3 tbsp natural peanut butter
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil (toasted preferred)
  • 1 tsp Sriracha sauce (optional)

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. Dice the red bell pepper and cucumber into bite-sized pieces; grate the carrots finely.
  3. In a bowl, whisk together peanut butter, lime juice, soy sauce, honey/maple syrup, sesame oil, and Sriracha until smooth.
  4. In a large bowl, combine chickpeas with diced vegetables and cilantro. Pour the dressing over the top and mix gently to coat all ingredients.
