- 1 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup

Instructions
- Rinse and drain the chickpeas thoroughly.
- Dice the red bell pepper and cucumber into bite-sized pieces; grate the carrots finely.
- In a bowl, whisk together peanut butter, lime juice, soy sauce, honey/maple syrup, sesame oil, and Sriracha until smooth.
- In a large bowl, combine chickpeas with diced vegetables and cilantro. Pour the dressing over the top and mix gently to coat all ingredients.
