  • 1 lb Italian sausage (spicy or mild)
  • 2 cups sweet potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 tbsp extra virgin olive oil

Instructions

  2. Cook pasta in a large pot of boiling salted water until al dente, then reserve some pasta water before draining.
