  • 34 boneless skinless chicken breasts (about 1 lb)
  • 8 oz penne pasta
  • 1 cup fresh asparagus, trimmed and cut into pieces
  • 8 oz baby bella or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping vegetables and mincing garlic.
  2. Cook the penne pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper, then cook for 6-7 minutes per side until cooked through. Remove from skillet and slice.
  4. In the same skillet, add asparagus and mushrooms; sauté for about 5 minutes until tender.
