  • 1 cup frozen sweet corn
  • 1 box (8.5 oz) Jiffy cornbread mix
  • 1/3 cup milk
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground meat until fully cooked. Add chopped onions and sauté until soft, about 5 minutes.
  3. Mix in kidney beans, diced tomatoes with juice, sweet corn, and chili powder. Simmer for 10 minutes.
  4. In a separate bowl, prepare the Jiffy cornbread mix according to package instructions by combining it with milk and egg until just mixed.
